Haitian Recipes - Fried Plantains
Traditional deep fried green plaintains served with Griot (Fried Pork) and Sauce Ti Malice (a very hot sauce)
Ingredients
3 green plantains
Cooking oil
Salt (optional)
Garlic (optional)
Directions
1. Place oil in a skillet over medium high heat
2. Sauté half inch plantain slices until they begin to brown
3. Remove the plantain and drain on paper towels
4. Use a plantain press (Tostonera) or the bottom of a cup to flatten the plantains
5. Press to half of its size
6. Sauté once again until golden brown
7. Remove and use paper towels to absorb excess oil. Sprinkle salt on green plantain
Haitian Style:
2 Green Plaintain
1 cup Corn or Vegetable Oil
½ cup Water
1 tbsp. Lawry’s Seasoned Salt (optional) 1 tbsp. Vinegar
1 Tostonera (Plaintain Press)
Peel plaintains and cut into 5 pieces each. Place oil in a deep frying pan on medium heat. In a small bowl, add remaining ingredients and set aside. Place cut plaintains in hot oil. Cook plaintains for 5 to 7 minutes on each side. Remove plaintains and lower heat. Quickly flatten plaintains using a Tostonera. Soak flattened plaintains in water mixture and place in oil on medium heat. Turn plaintains on each side until crispy and golden brown. Place fried plaintains on paper towels to remove excess oil. Serve hot.
